Learn how to recreate some of my specialty pastries in a fun evening of baking. Gather some friends and bring a bottle of wine to share. I will supply all the ingredients and tools needed to bake a selection of delicious Northern European treats!

Flødeboller


These fluffly Danish treats are one of my best-sellers. In this workshop you will learn to bake marzipan cookies, make homemade marshmallow, temper chocolate, assemble your flødeboller, and come up with your own flavor combinations. Each participant will make 6 pieces each of two variations of flødeboller during this class.

Yeasted doughs


Learn how to prepare two different kinds of enriched yeasted dough and the fillings to make Swedish cardamom buns and Dutch vlaai. We'll practice the rolling, knotting, cutting and folding techniques necessary to make these beautiful sweet bread pastries. Each participant will make 6 pieces of each pastry during this class. There will be extra dough for you to take home and practice with, so bring a large bowl or some tupperware.

Mazarin Tartlets


Little single-serving tartlets make a very pretty dessert for a special occassion. Learn how to make a delicate shortcrust pastry tartlet base and a fragrant almond frangipane filling for Swedish mazarin tarts, English bakewell tarts and many other classic European tarts. We will finish our tartlets with some simple icing and a garnish. Each participant will make 6 pieces each of two flavor variations of tartlets.
